　　酵母菌发酵后的最终产物是：酒精或二氧化碳。酵母菌在厌氧条件下进行发酵作用，会生成酒精。酵母菌在有氧条件下，进行正常的呼吸作用，则会变成二氧化碳。酵母菌发酵原理是酵母菌进行无氧呼吸产生乳酸，酵母菌分解葡萄糖产生丙酮酸，接着把丙酮酸放在缺氧和微酸性的条件下，则会转变成酒精。　　酵母是基因克隆实验中常用的真核生物受体细胞，培养酵母菌和培养大肠杆菌一样方便。 　　酵母是一种单细胞真菌，并非系统演化分类的单元。一种肉眼看不见的微小单细胞微生物，能将糖发酵成酒精和二氧化碳，分布于整个自然界，是一种典型的异养兼性厌氧微生物，在有氧和无氧条件下都能够存活，是一种天然发酵剂。　　酵母是单细胞微生物。它属于高等微生物的真菌类。有细胞核、细胞膜、细胞壁、线粒体、相同的酶和代谢途径。酵母无害，容易生长，空气中、土壤中、水中、动物体内都存在酵母。有氧气或者无氧气都能生存。　　酵母是兼性厌氧生物，未发现专性厌氧的酵母，在缺乏氧气时，发酵型的酵母通过将糖类转化成为二氧化碳和乙醇(俗称酒精)来获取能量。

酵母菌不是原核生物，属于真核生物，(包括真菌，动植物细胞) ，而原核生物有细菌，蓝藻，放线菌，衣原体支原体等细胞。原核生物的基本信息：原核生物(Prokaryotes)是原核细胞组成的生物，没有成形细胞核或线粒体的一类单细胞，包括蓝细菌、细菌、放线菌、螺旋体、支原体等。70年代分子生物学的资料表明:产甲烷细菌、极端嗜盐细菌、极端耐酸耐热的硫化叶菌和嗜热菌质体等的16S rRNA核苷酸序列，既不同于一般细菌，也不同于真核生物。此外，这些生物的细胞膜结构、细胞壁结构、辅酶、代谢途径、tRNA和rRNA的翻译机制均与一般细菌不同。因而有人主张将上述的生物划归原核生物和真核生物之外的"第三生物界"或古细菌界。真核生物的基本信息：真核生物eukaryotes 由真核细胞构成的生物。包括原生生物界、真菌界、植物界和动物界。定义 真核生物是所有单细胞或多细胞的、其细胞具有细胞核的生物的总称，它包括所有动物、植物、真菌和其他具有由膜包裹着的复杂亚细胞结构的生物。 真核生物与原核生物的根本性区别是前者的细胞内有以核膜为边界的细胞核，因此以真核来命名这一类细胞。许多真核细胞中还含有其它细胞器，如线粒体、叶绿体、高尔基体等。
